China Canned Food Association holds a seminar on the standard and quality of canned fruits in Beijing
Canned fruits such as peaches, pears and oranges are the most important categories of canned foods, and there is a large room for development in the domestic and foreign markets. At the same time, due to the low threshold of canned fruit processing technology, the large number of small enterprises, uneven technical standards, and product quality, low-quality canned fruit products can be seen everywhere in the domestic market. In order to unify the understanding, standardize the industry, guide and help fruit canned enterprises to strengthen quality awareness, pay attention to quality management, and improve quality. Recently, the Association organized the "Canned Fruit Standards and Quality Seminar", the National Food Industry Standardization Technical Committee Canned Subcommittee, Hunan Provincial Canned Food Industry Association, Zhangjiagang Haobo Chemical Co., Ltd. and Dalian Ideal Food Co., Ltd. Representatives of companies attended the meeting.

I. Canned fruit industry and market analysis
The annual output of canned fruits nationwide exceeds 1 million tons, which is the fastest growing canned variety in recent years. The export market is driven by oranges, peaches, pears and other varieties, with an annual export volume of more than 550,000 tons, and has become the world's main exporter of canned fruits. In the domestic market, canned fruit is the most popular variety in the market. A group of key enterprises such as Dalian Ideal have promoted market development with high-quality products and excellent brand image, and played an active role in leading the good reputation of canned fruits. However, it should be noted that canned fruits are still extremely irregular products and markets, and there are many narrow ideas and violations. For example, the illegal use of colorants, sweeteners and other food additives, and some even use industrial-grade additives to harm citizens' health. In terms of impurities in canned fruits, hair, glass fragments and other malignant impurities have not been fundamentally eliminated. In addition, some products are shoddy, using inferior raw materials to process products with inferior flavor and so on. In recent years, canned fruits have been found to have the most problems and the lowest pass rate in the sampling and testing by the national supervision department, and must be taken seriously by the entire industry.
Second, the correct application of sweeteners
The Ministry of Health 2007 Order No. 3 and 4 officially issued the expansion of the application of sweeteners acesulfame potassium (acesulfame potassium) and cyclamate (sodium cyclamate) in canned fruits. This regulation, on the one hand, has created favorable conditions for the processing of canned fruits to expand the sugar source, reduce costs and adjust the taste; on the other hand, the problem of correct use has become more prominent, and how to apply it scientifically and reasonably has become an inevitable choice for enterprises. The meeting invited Dr. Chen Xiaoping, a domestic sweetener manufacturing and application expert, to focus on the domestic and international regulations and application of sweeteners. Everyone agreed that: When using sweeteners, we must pay attention to the varieties and maximum usage levels stipulated by relevant standards. Do not increase the dosage blindly. Sweeteners and sugar should be used to match the flavor to the best. Experts remind application companies to avoid using compound sweeteners, be more cautious when applying export products, and pay attention to the standards and regulations of importing countries.
Third, product labeling regulations and requirements
In terms of labeling standards, GB7718 "General Rules for the Labeling of Prepackaged Foods" should be correctly implemented. Special attention should be paid to the correct labeling of food names, the content of the trademark information column, the application of nutrition labels and the timely change of standard numbers for canned foods. The content of the trademark design must not only meet the requirements, but also reflect the characteristics of the times of fashion and progress, and stimulate the goodwill of consumers.
Fourth, standard revision work
The standards for all kinds of canned fruits are the legal basis for processing, consumption and supervision. In the upcoming revision of canned fruits, national standards and industry standards should be planned. National standards should be formulated for domestic and foreign sales and large products involving industrial image. The standards highlight major physical and chemical indicators such as sugar content and solids. The use of sweeteners can be subdivided into whole sugar and low-sugar products to meet the different needs of different groups of people for canned fruit in sugar water. All indicators of the enterprise standard shall not be lower than the national (industry) standard.
Fifth, further stabilize and improve the quality of canned fruits
As a food, the safety of canned fruits is the first and the most important thing. Manufacturers must attach great importance to safety as a top priority. The safety of canned fruit is embodied in all links from raw materials, processing to the market, and embodied in the reasonable use and correct operation according to the process. Enterprises must take any safety hazards seriously and not allow safety issues to flow into the market and cause harm to consumers.
With the increasing expansion of the canned fruit market, companies should take the improvement of product quality and flavor as their goal, and produce products that consumers like by selecting high-quality raw materials and fine processing. Food safety and product quality are the survival and lifeline of an enterprise.
